Culatello di Zibello (PDO)

The Culatello di Zibello is a traditional DOP cold cut from Parma. It is also catalogued among the Presidi Slow Food; culatello is produced from pork thigh packed into the pigs own bladder.  After finely slicing it, we suggest you take a slice and put it in your mouth whole, close your eyes and wait for the heat of your palate to activate all the flavours and perfumes …. that will remain for at least half an hour. For a special treat, toast a slice of bread, season with a touch of butter and lay on top a slice of culatello. Great with dry sparkling white wine or with a medium-bodied and fruity red wine such as Lambrusco.
